Meet the Staff – FOH Manager

So it has been awhile since I posted on our blog, life is busy when you’re running a food truck. So it’s probably time I introduced myself. I’m Kayla and I am the one behind most of the blog, Facebook and Instagram posts. My titles include Front of House Manager, Baker, Line Cook, Marketing Manager, Chef’s Wife, Owner, among many others. I was born and raised in Iowa, smack dab in the middle of 5 kids and started working in customer service when I was 14. After high school I wasn’t sure what I wanted to do I was interested in culinary, medical, event planning, graphic design, and business management, So owning-operating a food truck lets me use all of those interests and talents. When not working at Well Seasoned you might have me baking barefoot in my kitchen at home, working on one of my various craft projects or doing various event planning.

Opening Details

I’m writing this as we are driving through Kentucky on our way to pick up our trailer in Jacksonville, FL. We will arrive Thursday night and pick up the trailer Friday morning, stay tuned for a Facebook Live of the trailer on Friday. We will arrive back in Omaha Monday night and will spend a week finishing up the trailer and are planning on participating in the OFTA Street Fair on Thursday, July 26th for our Grand Opening! BIG NEWS!!!

So we know y’all have been waiting in suspense for our BIG announcement!! Well the waiting is over!!!! We are opening a FOOD TRAILER!!! We are still pursuing a brick and mortar location for a full service restaurant, but in the meantime we decided to put it on wheels so we can bring our International Comfort Food straight to you on the streets! Opening will be later this summer, stay tuned for dates. Catch us at the Dandelion pop up on July 6th!

Getting Closer

We have been looking for the perfect location to bring y’all the best comfort foods from all over the world and look forward to being able to share that news with you soon! We are looking in the midwest Omaha area for a location that will be convenient to you wherever you might live, work or play. We are all getting very excited and look forward to meeting you soon!

Meet the Staff – Operations Manager

This is David Lane, he is one of our owners, Operations Manager and in-house comic relief. He will be handling our behind the scenes work!

David grew up in Florida and North Carolina. As a child much of his life revolved around food. Sometimes it was Key Lime Pie made with limes from the tree in his grandmother’s backyard. Other times it was oysters with his Dad, or his mom’s chicken and dumplings. No matter what the food was it was always fresh and scratch made.

He has a degree in Industrial Engineering from North Carolina State University and several years in food service as everything from a prep cook to Assistant GM. He looks forward to bringing all of this, his love for all things food and his experience in management to your experience at Well Seasoned!

Menu Development – Fried Chicken & Deviled Eggs

In the past few weeks we’ve been working on some more menu items. We’ve been really focused on perfecting our fried chicken and deviled eggs.

We made a trio of deviled eggs: the classic, smoked Salmon & capers and mapled bacon. We really wanted to give the classic deviled egg some flare or a little something extra. Hopefully, when you try these you are reminded of your grandmother’s house, or those potluck dinners you had as a kid!

The fried chicken was marinated in seasoned buttermilk and bourbon. Fried crispy and drizzled with a sage honey and served alongside a zucchini and summer squash gratin and sautéed  mustard greens.

Meet the Staff – Executive Chef

This is Jarrod Lane. He is our one of our Owners, Executive Chef and “Culinary Chieftain”. He has worked in kitchens almost his entire life, from washing dishes in a  local BBQ restaurant where he grew up, to catering on his own.  He had his culinary training at Metropolitan Community College in Omaha, NE and has associates degrees in Culinary Arts, Hospitality Management and Entrepreneurship. During his training, he was able to spend about 2 months interning at 2 different restaurants in Italy, as well as visiting Thailand and Japan on a culinary school trip. He grew up all over The South, born in Texas and moving to North Carolina, Georgia, Florida and finally ending up here in Nebraska in 2010. Jarrod has been affectionately called ‘the old man’ enjoying a cigar and whiskey on the front porch in a cardigan sweater. You might also find him oiling his leather bag or cowboy boots, or drinking sweet tea and watching tv with his wife. Jarrod is looking forward to being able to share some of his Southern and Italian roots with you at Well Seasoned.

 

Menu Development – Meatloaf

Last week the whole family got together and tested out recipes for our meatloaf. This meatloaf recipe is inspired by the meatloaf that Mammaw Bost used to cook down in North Carolina!

We started with fresh ground chuck roast and short rib, look at that marbling.

Added some of those traditional ingredients, like eggs and bread crumbs.

To serve alongside, we made red mashed potatoes and Whiskey glazed roasted carrots.

We also made two sauces to go with the meatloaf, a tomato-brown sugar glaze and a beef gravy.

Welcome to Well Seasoned!

Hello there! Welcome to our website! Let me tell you a little about who we are and what we are working on; we are a family working on an upscale casual restaurant concept with a menu inspired by comfort food from all over the world.

Currently we are working on menu development. We hope to bring you some of what we are working on through a pop-up restaurant. For those of you who may not know what that is, it is where we will bring our restaurant concept into  a venue for a night or two so you can experience what we are working on.
